Masako Yatabe Thomsen’s Pork Meat Balls

Makes about 20 packets and serves 4 as an appetizer.  A bamboo steamer works well for this dish and can be used to serve these little packets of deliciousness. 

Ingredients

  • 300 – 400 grams ground pork 

  • 50 grams green peas 

  • 1 large egg

  • 3 Tbs. breadcrumbs 

  • 1 tsp. fish sauce

  • salt, black pepper to taste

  • 1 lemon sliced thin

  • Makrut lime leaves, one small piece per meatball

  • Small squares of aluminum foil 

Method

  • Combine all ingredients except for the lemon slices and lime leaves

  • Form into small balls (about ½ inch)

  • Add a slice of lemon, half of the makrut leaf, and the pork ball onto the aluminum foil square.

  • Make a loose packet. Continue making pork packets until all of the mixture is used. (You should have about 20 or so packets).

  • Steam for about 15 minutes on medium high heat.
