Masako Yatabe Thomsen’s Pork Meat Balls
Makes about 20 packets and serves 4 as an appetizer. A bamboo steamer works well for this dish and can be used to serve these little packets of deliciousness.
Ingredients
300 – 400 grams ground pork
50 grams green peas
1 large egg
3 Tbs. breadcrumbs
1 tsp. fish sauce
salt, black pepper to taste
1 lemon sliced thin
Makrut lime leaves, one small piece per meatball
Small squares of aluminum foil
Method
Combine all ingredients except for the lemon slices and lime leaves
Form into small balls (about ½ inch)
Add a slice of lemon, half of the makrut leaf, and the pork ball onto the aluminum foil square.
Make a loose packet. Continue making pork packets until all of the mixture is used. (You should have about 20 or so packets).
Steam for about 15 minutes on medium high heat.
