Onil’s Red Onion Jam

A delicious addition to the good old hamburger on a bun or as a side flavor for roasted pork. You can also spread it with goat cheese on crostini or on a grilled cheese sandwich.  

Makes about 3 cups

Ingredients

  • 4 cups minced red onion

  • 2 cups granulated sugar

  • 2 cups red wine vinegar

  • 1 cup water

  • 3 to 4 bay leaves

  • 6 to 8 sprigs fresh thyme

  • Salt and pepper

Method

  • Combine all ingredients except salt and pepper in a pan with a large surface area, such as a sauté pan or rondeau. 

  • Bring to a full boil, then reduce heat to a medium boil, stirring occasionally. 

  • Cook until mixture is reduced and becomes syrupy; season with salt and pepper.  Remove from heat.

  • Cool jam; discard bay leaves and thyme sprigs when fully cooled.

  • Pour jam into a glass jar, cover, and refrigerate up to 12 months.
